Mediterranean Lemon Chicken Recipe


As it gets closer to summer, I really like to get outside and enjoy the evenings as much as I can. This means making bigger batch dinners and quick meals that won’t leave us feeling sluggish. One of my favorite things is to make a bunch of chicken and veggies because these ingredients so versatile. They can be eaten plain, on tortillas or even added to a salad which is always good to keep meals exciting. This week I made a big batch of lemon chicken with tomatoes and onions and it was perfect for my busy week

Lemon chicken is delicious and super easy to make. It can be made and left in the marinade overnight or even a few hours prior. I decided to add red onions and cherry tomatoes for a fresh Mediterranean feel since I’ve been craving my mom’s Greek soup lately but haven’t quite mastered the technique to make it yet. I paired it with a creamy lemon cucumber yogurt dressing for a little pop of tang.

This is a great one pot dish that you can put together in about 20 minutes on a weeknight and improve with a range of veggies. I love cast iron skillets for so many reasons and the fact that they can go from stove top to oven is my favorite. I know a lot of pans can do that but this was my first real cast iron I received as a wedding gift and I just love it. I like to get a nice sear on the chicken and add the onions and let it cook while tossing the chicken in the juices as they brown. It adds so much flavor and deliciousness. Then I add the cherries, a few more onions and pop it into the oven for the chicken to cook. I could’ve done this all on the stove top but a small piece of paper got on the burner and may have slightly caught on fire but that’s a different story. ?

Lemon chicken and veggies is great for busy weeknights and keeping things fresh with leftovers all week. Adding extra veggies or turning it into a wrap are just a couple of ideas for this tasty dish. It’s definitely going to be a staple in our home this summer so I can spend a little less time in the kitchen and more time enjoying the beautiful summer with my family.

Mediterranean Lemon Chicken


  • 3 chicken breasts
  • 1 cup cherry tomatoes
  • ½ red onion
  • ¼ cup feta cheese


  • ½ freshly squeezed lemon juice
  • 4 tbsp olive oil
  • 1 clove garlic, minced
  • salt and pepper, to taste

Lemon cucumber dressing

  • cup plain yogurt
  • cup sour cream
  • 3 tbsp fresh lemon juice
  • ¼ cup grated cucumber (pat dry)
  • salt and pepper, to taste


  1. Cut chicken into bite size pieces and combine with marinade ingredients. Refrigerate at least 1 hour
  2. Over medium heat, empty marinated chicken into pan and sear sides
  3. Add tomatoes and onion continuing to cook until chicken is cooked through
  4. Remove from heat and top with feta and garnish with chopped parsley

Lemon Cucumber Sauce

  1. Combine ingredients in bowl and refrigerate until ready to use
