Buffalo Chicken Nachos Recipe


Three cheese buffalo chicken nachos are spicy, cheesy, crunchy and made in only ten minutes these nachos are the perfect for those busy weeknights.

Living in a college town means being acquainted with all kinds of quirky, delicious food and nachos is no exception. One of the greatest thing about nachos is that they can be pretty much whatever you want them to be. From Italian nachos with fried noodle chips to BBQ nachos piled high with smoked meat and potato salad, there’s a lot to be inspired by in this town. I decided to put a spin on a favorite in our home, buffalo chicken.

I decided to make buffalo chicken nachos in my cast iron skillet because it lessens the mess and is super convenient since it can go straight into the oven. Just like any other toddler mom, I needed this to be a quick meal. Some days I have more time in the kitchen and other days it’s a struggle to even make a salad. These buffalo chicken nachos take less than ten minutes and are more filling so I’d say that’s a happy medium.

Did you know that Walmart marks down their rotisserie chickens at the end of the day if there’s a surplus? We don’t always get lucky to find one but usually early on Saturday mornings we can snag one for 50% off which is about $2.50. A few months ago we even got a few for 75% off which was magical but far and few between.

These buffalo chicken nachos have two layers which reminded me of a casserole. I could probably fit a third layer in the pan if I were making these for a crowd and it would take barely any extra time. All you need to do is layer the chips, buffalo sauce coated chicken, monterrey jack queso, onions, and cheddar and repeat. I stuck it in the broiler for about 5 minutes until the cheddar was melted and queso was bubbling and it’s as easy as that! Top with cilantro, jalapenos and a little feta for fun.

These buffalo chicken nachos are quick, flavorful and oh so easy to make for a larger or small crowd. Since the chips layer the bottom, there’s barely even clean up in the pan except for a quick wipe. What’s not to love! If you’re anything like us you might just eat these straight out of the pan and avoid dishes all together. …..
